Excess carbohydrates in the body are converted into palmitic acid. As a result, it is a major body component of animals, but even more so in conventionally-raised, grain-fed animals than in grass-fed animals. Palmitic acid may increase your risk of heart disease due to its effect on cholesterol levels: a meta-analysis in the Journal of Nutrition found that palm oil significantly increases low-density lipoprotein (LDL), or bad cholesterol, compared with vegetable oils low in saturated fat. On top of that, a separate study found that rats fed a diet of palmitic acid and carbs showed a suppression of the body's signaling from leptin and insulin, the key hormones involved in weight regulation and appetite suppression.
